I have spent the past 2 weeks in Florida, and it has been incredible!! My FAVORITE part of being here is the fresh produce from the farmers markets… The local farmers sell the most delicious produce, which I have missed SO MUCH this winter.
Here’s a sneak peek at what I’ve been eating: watermelon, Florida oranges (obvi), chia pudding, mango, kiwi, pear juice, strawberries, blueberries, yellow dragon fruit, and my fav… PINK pineapple (woah)!!
Yes, you read that correctly… We found a pink pineapple at the farmers market on Saturday!! It’s a very rare fruit, so we had to bring one home when the farmer told us about it! It’s SO delicious & very tropical 🙂 I am constantly in awe of the beautiful and delicious foods that God has created for us to nourish our bodies with and enjoy!!
The fruit we bought was too beautiful not to share, so my mom helped me create a beautiful fruit plate!! Think charcuterie board but with all whole foods, which is very on brand for me 🙂
In addition, I have 2 personal updates to share:
- I have been using the Read Scripture app, which provides a plan for reading the Bible in a year. I love it, and I highly recommend (you don’t need to start on January 1st to do it)!!
- I will be starting the Plant over Processed 30 day challenge on February 1st!! I am using the cookbook written by Andrea Hannemann (@earthyandy on Instagram). You can find the cookbook here. The whole point of the challenge is to choose whole foods (i.e. plants) over processed foods! I will be eating plant based, unprocessed foods for 30 days. I want to see if it helps with some of my stomach issues, and I want to try new foods… I think it’ll be a fun little experiment, so I will let you guys know my thoughts if you’re interested!
